Dorsia is looking for a Sous Chef who will not only lead the team day-to-day but actively help steer the restaurant toward earning a Michelin star through mentorship, discipline, creativity, and a passion for excellence.

Position Summary

As Sous Chef, you are the primary support to the Executive Chef and the backbone of day-to-day kitchen operations. You are responsible for leading the team, maintaining consistency, managing prep and service, upholding standards, and contributing to creative and seasonal menu development.

Main Responsibilities Kitchen Leadership & Operations

- Lead the kitchen during service, ensuring clean execution, consistent plating, and strong communication.

- Maintain high standards of mise en place, cleanliness, organization, and station discipline.

- Support the Chef with daily operations, features, new dishes, and tasting menu elements.

- Ensure food quality, seasoning, and technique remain consistent across all stations.

Ordering, Inventory & Product Management

- Order products and maintain strong relationships with suppliers.

- Manage inventory, food cost, portioning, and waste control.

- Document recipes, par levels, and seasonal preservation systems.

Team Development & Staff Culture

- Train and mentor cooks to elevate technique and professionalism.

- Delegate effectively while remaining hands-on.

- Uphold uniform, grooming, and professionalism standards.

- Ensure safe and proper equipment use and HACCP compliance.

Guest Experience & Quality Control

- Ensure every dish reflects Dorsia's philosophy and standards.

- Address and respond to guest feedback professionally.

Minimum Qualifications

- Culinary school diploma or equivalent.

- 3–6 years in refined, high-end, or Michelin-level kitchens.

- Strong French and Italian technical foundation.

- Experience leading teams in high-pressure environments.

- Strong communication skills; English and French an asset.

En tant que Sous-chef, vous êtes le principal soutien du Chef exécutif et le pilier des opérations quotidiennes en cuisine. Vous êtes responsable de diriger l’équipe, de maintenir la constance des plats, de gérer la mise en place et le service, et de contribuer au développement créatif et saisonnier du menu.

Qualifications minimales
