Description

A contemporary independent restaurant group in Dubai is seeking a highly experienced cluster restaurant general manager to oversee two distinct concepts: a premium bakery and eatery, and a deli and winery. This is a senior multi-site leadership role requiring strong commercial oversight, operational discipline, and brand alignment across both locations.

The successful candidate will take full ownership of performance across the two venues, ensuring operational excellence, financial control, and consistent guest experience. Proven pre-opening experience is essential, as the role includes supporting launches, refinements, and structured growth initiatives.

Key responsibilities
β€’ Oversee full operational management of both locations, ensuring brand consistency and profitability
β€’ Lead recruitment, onboarding, and performance management across both venues
β€’ Provide strategic direction and daily support to department heads and management teams
β€’ Hold full P&L responsibility, including budgeting, forecasting, and cost control
β€’ Monitor food and beverage margins, labour costs, stock control, and expense management
β€’ Lead and execute pre-opening planning, team structuring, and launch readiness
β€’ Ensure compliance with all UAE health, safety, and alcohol licensing regulations
β€’ Drive guest experience standards and operational efficiency across both sites
β€’ Oversee POS systems, reporting accuracy, and financial transparency
β€’ Implement and maintain SOPs and service standards across both concepts

Requirements
β€’ 7–10 years’ senior management experience within contemporary or premium restaurant environments
β€’ Proven multi-site management experience
β€’ Demonstrated pre-opening experience from concept to launch
β€’ Strong financial capabilities with hands-on P&L management
β€’ Hands-on management approach and able to work independently
β€’ Experience in bakery, deli, or wine-led concepts advantageous
β€’ Strong leadership presence with the ability to manage and motivate diverse teams
β€’ Thorough understanding of UAE F&B regulatory requirements
