About Wynn Al Marjan Island:

On schedule to open in the United Arab Emirates in Spring 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

About The Position

Wynn Al Marjan is currently seeking a General Manager - Italian & Seafood Restaurant to join the resort’s Food & Beverage team.

Responsibilities

The primary duties and responsibilities of this role are:
• Lead all aspects of restaurant operations, including service, culinary, people, and financial performance.
• Ensure the flawless execution of service standards, guest engagement, and brand positioning.
• Drive top-line revenue while controlling costs, labour productivity, and maximizing profitability.
• Monitor daily performance and implement improvements where needed.
• Lead, coach, and develop department heads and team members to build a performance-driven culture.
• Collaborate with culinary and bar leaders on menu development, promotions, and guest personalization.
• Analyse guest feedback, operational KPIs, and financial metrics to identify opportunities and drive continuous improvement.
• Ensure all service and food quality standards are consistently met.
• Ensure full compliance with health, safety, licensing, and hygiene regulations.
• Uphold the highest standards of integrity, professionalism, and guest confidentiality.
• Manage inventory, equipment, and resources effectively.
• Prepare and present regular operational and financial reports.
• Supervise scheduling, training, and POS system operations.
• Provide personalized service to VIP guests and regular patrons
• Coach, motivate, and evaluate team members on a regular basis throughout the calendar year.

About You

The ideal candidate for this position will have the following experience and qualifications:
• 3-4 years’ experience in a similar position in a fine dining with an average of at least 50 covers a day.
• Candidates with 2 star and 3-4 hat Gault Millau restaurants will be preferred.
• Excellent product knowledge of fine dining cuisine specific to the type of restaurant and budgeting.
• Secondary school diploma or above; bachelor’s degree in hospitality management an advantage and WSET 2.
• Proficient in MS Office and POS software.
• International experience in trendsetting places such as Tokyo, London, Paris, New York, Hong Kong, Australia, Singapore and Shanghai a great advantage.
• Passion and knowledge for service, food and wine with Sommelier certification an advantage.
• Excellent leadership, management and supervisory abilities.
• Customer service orientated, excellent communicator and good interpersonal skills.
